The growing mass catering market can be divided into two types: open markets and closed. Open markets are considered to be markets which target the full spectrum of consumers. Open market outlets establish themselves ‘on the streets’ and have access to all consumers.
Closed markets are those which cater for a specific group of consumers, which the outlets are exclusively designed to serve. They include, for example, outlets operating as canteens in corporate offices, production units or factories.
